Zucchini Protein Waffles (Sugar-Free)

Deliciously moist and naturally sweet zucchini protein waffles that are completely sugar-free, perfect for a healthy breakfast or snack.

Ingredients

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 2 large eggs
  • 1/2 cup vanilla protein powder (unsweetened)
  • 1/4 cup almond flour
  • 1/4 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • Pinch of salt
  • Cooking spray or coconut oil for greasing

Instructions

  1. Preheat your waffle iron and lightly grease it with cooking spray or coconut oil.
  2. Grate the zucchini and gently squeeze out excess moisture using a clean kitchen towel or paper towel.
  3. In a large bowl, whisk together the eggs, almond milk, and vanilla extract until combined.
  4. Add the protein powder, almond flour, baking powder, cinnamon, and salt to the wet ingredients and stir until smooth.
  5. Fold the grated zucchini into the batter.
  6. Pour the batter onto the preheated waffle iron, using enough to fill but not overflow.
  7. Cook waffles for 4-6 minutes or until golden brown and cooked through.
  8. Carefully remove the waffles and serve warm with your favorite toppings.

Notes

For extra flavor, try adding a handful of chopped walnuts or a sprinkle of cinnamon on top before serving.
