  • 2 medium zucchinis, grated
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 cup almond flour
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup marinara sauce
  • 1/4 cup sliced pepperoni or your favorite pizza toppings (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the zucchini, mozzarella, Parmesan, beaten egg, almond flour, Italian seasoning, garlic powder, salt, and pepper. Mix well until a dough-like mixture forms.
  4. Form small bite-sized rounds on the prepared baking sheet, pressing them firmly to hold shape.
  5. Bake for 15 minutes until the crust bites are golden brown and firm.
  6. Remove from oven, top each bite with a small spoonful of marinara sauce, some pepperoni slices or preferred toppings, and a sprinkle of mozzarella cheese.
  7. Return to the oven and bake an additional 5-7 minutes until cheese melts and toppings are heated through.
  8. Allow to cool slightly before serving warm.
