Zucchini Bread Protein Muffins

Deliciously moist zucchini bread protein muffins packed with wholesome ingredients, perfect for a nutritious snack or breakfast on-the-go.

Ingredients

  • 1 cup grated zucchini
  • 1 cup whole wheat flour
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the whole wheat flour, protein powder, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs with honey (or maple syrup), applesauce, Greek yogurt, and vanilla extract until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in the grated zucchini and chopped walnuts, if using.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moisture and sweetness, spread a thin layer of almond butter on warm muffins before serving.
