Zucchini Bread Protein Bars

These Zucchini Bread Protein Bars combine moist zucchini with wholesome protein and warm spices for a delicious, nutritious snack perfect any time of day.

Ingredients

  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup rolled oats
  • 1/2 cup vanilla whey protein powder
  • 1/4 cup almond butter
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. In a large bowl, combine the rolled oats, protein powder, cinnamon, nutmeg, baking powder, and salt.
  3. In a separate bowl, mix together the grated zucchini, almond butter, maple syrup, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. Fold in the chopped walnuts if using.
  6. Spread the batter evenly into the prepared pan and smooth the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool completely before cutting into 10 bars.

Notes

For extra moisture, consider adding a tablespoon of Greek yogurt to the batter. Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
