Zombie Brain Strawberry Tart

This Zombie Brain Strawberry Tart is a spooky yet delicious dessert featuring a crisp tart shell filled with creamy vanilla custard and topped with fresh strawberries artfully arranged to resemble a zombie brain.

  • 1 pre-made tart shell (9-inch)
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp strawberry jam (for glaze)
  • Red food coloring (optional, for brain effect)

Instructions

  1. Preheat oven to 350°F (175°C). Blind bake the tart shell for 12–15 minutes or until golden. Let it cool completely.
  2. In a saucepan, combine milk and heavy cream and heat until just simmering.
  3. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  4. Slowly pour the hot milk mixture into the egg mixture while whisking continuously to temper the eggs.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 3–5 minutes.
  6. Remove from heat and stir in vanilla extract. Let custard cool to room temperature, then chill in the refrigerator until set.
  7. Fill the cooled tart shell with the chilled custard.
  8. Arrange the strawberry slices on top in swirling rows resembling brain folds. Optionally, gently brush strawberries with a mixture of strawberry jam and a few drops of red food coloring to enhance the brain-like appearance.
  9. Refrigerate the tart for at least 1 hour before serving.

Notes

For an extra spooky touch, add edible red glitter or small candy eyes to your strawberry brain pattern just before serving.
