White Chocolate Blueberry Protein Blondies

  • 1 cup fresh blueberries
  • 1 cup oat flour
  • 1/2 cup vanilla or unflavored protein powder
  • 1/3 cup maple syrup
  • 1/4 cup Greek yogurt
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together oat flour, protein powder, baking powder, and salt.
  3. In a large bowl, beat the eggs, then mix in maple syrup, Greek yogurt, melted coconut oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in white chocolate chips and fresh blueberries gently to avoid crushing the berries.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan before slicing into 12 bars.
