Vegan Banana Bread Protein Cookies

Deliciously moist and naturally sweet vegan cookies infused with banana bread flavors and a protein boost, perfect for a healthy snack or post-workout treat.

  • 2 ripe bananas, mashed
  • 1 cup oat flour
  • 1/2 cup vegan protein powder (vanilla flavor)
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup vegan chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the maple syrup, almond butter, and vanilla extract to the bananas; mix well.
  4. In a separate bowl, combine oat flour, vegan protein powder, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in chopped walnuts and vegan chocolate chips if using.
  7. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, flattening them slightly.
  8. Bake for 12-15 minutes or until edges are golden and cookies are set.
  9. Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra chewiness, substitute half the oat flour with whole wheat flour, or add a tablespoon of ground flaxseed for more fiber.
