  • 2 tablespoons maple syrup
  • 1 tablespoon melted coconut oil
  • 1 cup fresh peach slices
  • Optional: Greek yogurt or maple syrup for serving

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together oat flour, vanilla protein powder, baking powder, and salt.
  3. In another bowl, combine almond milk, egg, vanilla bean paste, maple syrup, and melted coconut oil.
  4. Pour wet ingredients into dry ingredients and stir until just combined; avoid overmixing.
  5. Lightly grease the waffle iron and pour batter onto it, cooking waffles until golden brown and cooked through, about 4-5 minutes.
