Vanilla Bean Panna Cotta with Berries

This creamy vanilla bean panna cotta topped with fresh mixed berries offers a delicate and refreshing Italian dessert perfect for any occasion.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 vanilla bean, split and seeds scraped
  • 1/2 cup granulated sugar
  • 2 1/4 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • Mint leaves for garnish (optional)

Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
  2. In a saucepan, combine heavy cream, whole milk, vanilla bean seeds, and the scraped pod. Heat over medium heat until just simmering, stirring occasionally.
  3. Remove from heat and discard the vanilla pod. Stir in sugar until dissolved.
  4. Add the bloomed gelatin to the warm cream mixture and whisk until fully dissolved.
  5. Pour mixture into individual serving glasses or molds and refrigerate for at least 4 hours or until set.
  6. Before serving, top with mixed fresh berries and garnish with mint leaves if desired.

Notes

For a smoother panna cotta, strain the cream mixture before adding gelatin. You can also substitute the mixed berries with a berry compote or passion fruit pulp for a different flavor twist.
