Turkey Sausage & Sweet Potato Hash

A hearty and flavorful turkey sausage sweet potato hash that combines savory sausage with tender sweet potatoes and fresh veggies, perfect for a wholesome breakfast or dinner.

  • 1 lb turkey sausage, casings removed and crumbled
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • 2 green onions, thinly sliced (optional garnish)
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook, stirring occasionally, for about 10 minutes until they start to soften.
  2. Add the remaining tablespoon of olive oil to the skillet along with the onion, red bell pepper, and garlic. Cook for 3-4 minutes until vegetables are softened.
  3. Add the crumbled turkey sausage to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  4. Sprinkle smoked paprika, ground cumin, salt, and black pepper over the mixture. Stir well to combine and cook for an additional 2 minutes to let the flavors meld.
  5. Once the sweet potatoes are tender and the sausage is fully cooked, remove the skillet from heat.
  6. Garnish with sliced green onions and chopped fresh parsley if desired. Serve warm.

Notes

For extra richness, top the hash with a fried or poached egg before serving, or add a dash of hot sauce for a spicy kick.
