Turkey Sausage Egg White Breakfast Casserole

  • 1 pound lean turkey sausage
  • 2 cups egg whites
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup chopped onions
  • 1 cup fresh spinach, chopped
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with non-stick cooking spray.
  2. In a skillet over medium heat, cook the turkey sausage until browned and cooked through, breaking it apart as it cooks. Drain any excess fat.
  3. In a large bowl, combine the egg whites, salt, pepper, garlic powder, and dried oregano. Whisk until well blended.
  4. Add the cooked turkey sausage, diced bell peppers, chopped onions, spinach, and shredded cheese to the egg white mixture. Stir to combine evenly.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
  6. Bake for 30-35 minutes or until the casserole is set and the top is slightly golden.
  7. Allow to cool for a few minutes before slicing and serving.
