  • 1 lb beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups diced tomatoes (fresh or canned)
  • 2 medium zucchini, diced
  • 2 medium carrots, sliced
  • 1 cup fresh green beans, trimmed and cut
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides, about 5-7 minutes.
  2. Add diced onion and minced garlic to the pot and sauté until softened, approximately 3 minutes.
  3. Pour in the beef broth and diced tomatoes. Stir in thyme and oregano. Bring to a boil, then reduce heat to low and simmer covered for 45 minutes.
  4. Add zucchini, carrots, green beans, and corn to the pot. Season with salt and black pepper. Simmer uncovered for an additional 20 minutes or until vegetables are tender.
  5. Adjust seasoning to taste. Ladle soup into bowls and garnish with chopped fresh parsley before serving.
