  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 2 tbsp ice water
  • 2 cups whole milk
  • 1/2 cup granulated sugar (for custard)
  • 4 large egg yolks (for custard)
  • 1/4 cup cornstarch
  • 1 tsp pure vanilla extract
  • Assorted fresh summer fruits (strawberries, blueberries, kiwi, peaches, raspberries)
  • 1 tbsp apricot jam (optional, for glaze)

Instructions

  1. In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.
  2. Mix egg yolk with ice water, then add to the flour mixture. Pulse until dough starts to come together.
  3. Turn dough onto a floured surface, shape into a disc, wrap in plastic, and chill for at least 1 hour.
  4. Preheat oven to 350°F (175°C). Roll out the chilled dough and fit it into a 9-inch tart pan. Prick the bottom with a fork.
  5. Line tart shell with parchment and fill with pie weights or dried beans. Bake blind for 15 minutes. Remove weights and parchment; bake another 10 minutes until golden. Let cool.
  6. To make custard, heat milk in a saucepan until just simmering.
  7. Whisk sugar, egg yolks, and cornstarch in a bowl until smooth. Gradually pour hot milk into egg mixture, whisking constantly.
  8. Return mixture to saucepan and cook over medium heat, stirring constantly until thickened and boiling. Remove from heat and stir in vanilla extract.
  9. Pour custard into cooled tart shell. Chill tart in fridge for at least 2 hours to set.
  10. Arrange fresh summer fruits decoratively over the set custard.
  11. Optional: Warm apricot jam and brush lightly over fruits for a shiny glaze.

Notes

For an extra touch, sprinkle toasted sliced almonds over the fruit or serve with a dollop of whipped cream.
