This Strawberry Poke Cake features a moist vanilla cake infused with sugar-free strawberry jello, creating a naturally sweet, low-sugar dessert perfect for any occasion.

  • 1 box sugar-free vanilla cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 1 package (3 oz) sugar-free strawberry jello
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups whipped topping (sugar-free)
  • Fresh strawberries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the sugar-free vanilla cake mix according to package instructions using eggs, oil, and water.
  3. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow cake to cool for 10 minutes. Using the handle of a wooden spoon, poke holes all over the surface of the cake.
  5. In a bowl, dissolve sugar-free strawberry jello in 1 cup boiling water. Stir in 1 cup cold water.
  6. Pour the jello mixture evenly over the poke holes so it seeps into the cake.
  7. Refrigerate the cake for at least 2 hours to allow the jello to set fully.
  8. Before serving, spread the sugar-free whipped topping evenly over the cake.
  9. Garnish with fresh strawberries if desired and serve chilled.

Notes

For an extra burst of flavor, add a few fresh mint leaves on top or swap whipped topping for coconut cream to make it dairy-free.
