Sticky Ginger Lime Chicken Thighs

These Sticky Ginger Lime Chicken Thighs combine tangy lime and warm ginger to create a flavorful, tender, and juicy dish perfect for any dinner occasion.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • Juice and zest of 2 limes
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon toasted sesame seeds (optional, for garnish)

Instructions

  1. In a bowl, whisk together soy sauce, honey, grated ginger, minced garlic, lime juice and zest, olive oil, and sesame oil.
  2. Season the chicken thighs with salt and pepper, then place them in a resealable plastic bag or shallow dish.
  3. Pour the marinade over the chicken, making sure each piece is well coated. Marinate for at least 30 minutes, preferably 2 hours or overnight in the refrigerator.
  4. Preheat your oven to 400°F (200°C).
  5. Heat a large ovenproof skillet over medium-high heat. Remove chicken from marinade (reserve the marinade) and sear the thighs skin-side down for 4-5 minutes until golden and crispy.
  6. Flip the chicken thighs and cook for another 2 minutes.
  7. Pour the reserved marinade over the chicken and transfer the skillet to the oven.
  8. Bake for 20-25 minutes until the chicken is cooked through and the sauce is sticky and caramelized.
  9. Garnish with sliced green onions and toasted sesame seeds before serving.

Notes

For extra zest, serve with steamed jasmine rice and a side of sautéed greens. You can also add a pinch of chili flakes to the marinade for a spicy kick.
