Sparkling Raspberry Lemonade (Monkfruit)

A refreshing and naturally sweetened sparkling raspberry lemonade made with monkfruit, perfect for a healthy, low-calorie summer drink.

Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup fresh lemon juice (about 3 lemons)
  • 4 cups sparkling water, chilled
  • 2 tablespoons monkfruit sweetener
  • Ice cubes
  • Fresh mint leaves and lemon slices for garnish

Instructions

  1. In a blender, puree the fresh raspberries until smooth.
  2. Strain the raspberry puree through a fine mesh sieve to remove seeds.
  3. In a pitcher, combine the lemon juice and monkfruit sweetener; stir until the sweetener is fully dissolved.
  4. Add the raspberry puree to the lemon mixture and stir to combine.
  5. Slowly pour in the sparkling water and gently stir to mix.
  6. Fill glasses with ice cubes and pour the sparkling raspberry lemonade over the ice.
  7. Garnish with fresh mint leaves and lemon slices before serving.

Notes

For an extra zing, add a splash of fresh lime juice or muddle some fresh basil leaves into the mix for an herbal twist.
