Southern Peach Cobbler (Oat FlourHoney)

A delicious and naturally sweet Southern peach cobbler made with wholesome oat flour and honey, perfect for a comforting dessert with a healthy twist.

  • 6 cups fresh peaches, peeled and sliced
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup almond milk (or any plant-based milk)
  • 2 tablespoons honey (for topping)
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, combine sliced peaches, 1/4 cup honey, lemon juice, and vanilla extract. Toss gently to coat evenly and set aside.
  3. In another bowl, whisk together oat flour, baking powder, salt, and ground cinnamon.
  4. Stir in the melted coconut oil and almond milk until a smooth batter forms.
  5. Pour the peach mixture into the prepared baking dish, spreading evenly.
  6. Drop spoonfuls of the oat flour batter over the peaches, covering as much as possible.
  7. Drizzle 2 tablespoons honey over the batter for added sweetness.
  8. Bake for 35-40 minutes or until the topping is golden brown and peaches are bubbling.
  9. Allow to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream.

Notes

For an extra crunch, sprinkle chopped pecans or walnuts on top before baking. Serve warm with a dollop of whipped cream or vanilla ice cream.
