  • 1 cup oat flour
  • 1/4 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut sugar
  • 2 tbsp coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips (70% cocoa or higher)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together oat flour, almond flour, baking soda, and salt.
  3. In another bowl, mix coconut sugar, melted coconut oil, applesauce, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet ingredients, stirring until combined.
  5. Fold in the dark chocolate chips evenly.
  6. Drop tablespoon-sized scoops of dough onto the baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are lightly golden but centers remain soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra chewiness, refrigerate the dough for 30 minutes before baking or add a tablespoon of Greek yogurt to the batter.
