Smoked Turkey & Asparagus Frittata

This Smoked Turkey Asparagus Frittata is a flavorful and healthy dish perfect for breakfast or brunch, combining smoky turkey with fresh asparagus in a fluffy egg base.

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup smoked turkey breast, diced
  • 1 cup fresh asparagus tips, chopped
  • 1/2 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add chopped onion and sauté until softened, about 3 minutes.
  4. Add asparagus tips and smoked turkey to the skillet; cook for another 2-3 minutes until asparagus is tender-crisp.
  5. Pour the egg mixture evenly over the turkey and asparagus in the skillet.
  6. Sprinkle shredded cheddar cheese on top.
  7. Cook on the stovetop over medium heat without stirring for about 3-4 minutes until edges begin to set.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the frittata is fully set and slightly golden on top.
  9. Remove from oven and let cool for a few minutes before slicing and serving.

Notes

For an extra burst of flavor, sprinkle fresh chopped chives or parsley on top before serving.
