Slow Cooker Shredded Chicken for Street Tacos

Tender, flavorful shredded chicken cooked slowly to perfection, perfect for authentic street-style tacos bursting with traditional Mexican flavors.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Corn tortillas, for serving

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix chicken broth, olive oil, chopped onion, minced garlic, cumin, smoked paprika, chili powder, oregano, salt, and pepper.
  3. Pour the mixture over the chicken breasts.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and easily shreds.
  5. Remove the chicken from the slow cooker and shred with two forks.
  6. Return shredded chicken to the slow cooker and stir in fresh cilantro and lime juice.
  7. Let it soak in the juices for 10 minutes before serving.
  8. Serve the shredded chicken warm on corn tortillas with your favorite taco toppings.

Notes

For extra flavor, serve with diced onions, fresh cilantro, and a squeeze of lime or your favorite salsa. You can also top with crumbled queso fresco for an authentic touch.
