This Slow Cooker Hawaiian Beef is a flavorful, pork-free dish featuring tender beef simmered in a sweet and tangy pineapple sauce, perfect for an easy and delicious dinner.

  • 2 lbs beef chuck roast, cut into chunks
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 cup pineapple chunks (fresh or canned)
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Place the beef chunks into the slow cooker.
  2. In a bowl, mix pineapple juice, soy sauce, brown sugar, rice vinegar, garlic, and ginger until well combined.
  3. Pour the sauce mixture over the beef in the slow cooker.
  4. Add the sliced onion, red bell pepper, and pineapple chunks on top.
  5. Cover and cook on low for 7–8 hours or on high for 3–4 hours, until the beef is tender.
  6. If a thicker sauce is desired, stir in the cornstarch slurry and cook on high for an additional 15-20 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

Serve this Hawaiian beef over steamed white rice or cauliflower rice for a lighter option. Adding a side of steamed greens complements the tropical flavors nicely.
