3 lbs beef chuck roast
1 cup low-sugar barbecue sauce
1/2 cup beef broth
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp chili powder
1/2 tsp salt
1 small onion, sliced
Instructions
Place the sliced onion at the bottom of the slow cooker.
Mix together the barbecue sauce, beef broth, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, black pepper, chili powder, and salt in a bowl.
Place the beef chuck roast on top of the onions and pour the sauce mixture over the beef.
Cover and cook on low for 8-10 hours, or until the beef is tender and easily shredded.
Remove the beef from the slow cooker and shred it using two forks.
Return the shredded beef to the slow cooker and stir to coat with the sauce.
Serve warm on buns, in bowls, or alongside your favorite sides.
Notes
For extra flavor, add a splash of smoked liquid or serve with pickled jalapeños for a spicy kick.
