  • 4 bone-in, skin-on chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, paprika, salt, and pepper.
  3. Add the chicken thighs and potatoes to the bowl and toss well to coat everything evenly.
  4. Arrange the chicken and potatoes in a single layer on a sheet pan, skin side up for the chicken.
  5. Bake for 35-40 minutes or until the chicken is cooked through and the potatoes are golden and tender.
  6. Optionally, broil for 2-3 minutes at the end to crisp up the chicken skin.
  7. Garnish with fresh parsley before serving.
