  • 1 cup canned black beans, drained and rinsed
  • 4 small corn or flour tortillas
  • 1/4 cup chopped onions
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)
  • Hot sauce (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté onions until translucent, about 3 minutes.
  2. Add black beans, cumin, chili powder, salt, and pepper to the skillet and cook for 2–3 minutes until heated through.
  3. In a bowl, whisk the eggs lightly and pour over the bean mixture. Stir gently to scramble until eggs are fully cooked, about 3–4 minutes.
  4. Warm the tortillas in a separate pan or microwave until pliable.
  5. Divide the scrambled egg and black bean mixture evenly among the tortillas.
  6. Top each taco with diced tomatoes, shredded cheddar cheese, and fresh cilantro if desired.
  7. Add hot sauce for extra flavor, then serve immediately.

Notes

For an extra protein boost, add cooked chorizo or turkey sausage. Serve with a side of avocado slices or salsa verde.
