  • 1 cup cooked lean ground turkey
  • 1/2 cup chopped spinach
  • 1/4 cup diced red bell pepper
  • 1/4 cup shredded low-fat cheddar cheese
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin.
  2. In a large bowl, whisk the eggs until well combined.
  3. Add the cooked ground turkey, spinach, red bell pepper, cheddar cheese, green onions, garlic powder, salt, and black pepper to the eggs. Stir until evenly mixed.
  4. Pour the mixture evenly into the prepared muffin cups.
  5. Bake for 18–22 minutes, or until the muffins are set and a toothpick inserted in the center comes out clean.
  6. Allow the muffins to cool for a few minutes before removing them from the tin.
  7. Serve warm or store in the fridge for a convenient protein-packed snack or breakfast.
