Raspberry Lemonade Greek Yogurt Popsicles

Refreshing and naturally tangy, these Raspberry Lemonade Greek Yogurt Popsicles combine vibrant raspberries, zesty lemon, and creamy yogurt for a healthy summer treat.

Ingredients

  • 1 cup fresh raspberries
  • 1 cup Greek yogurt (plain or vanilla)
  • ½ cup freshly squeezed lemon juice
  • ⅓ cup honey or maple syrup
  • ½ cup water
  • 1 teaspoon lemon zest

Instructions

  1. In a blender, combine raspberries, lemon juice, water, honey, and lemon zest. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve to remove seeds, if desired.
  3. In a bowl, gently fold the raspberry lemonade mixture into the Greek yogurt until well combined but slightly marbled.
  4. Pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion.
  5. Insert sticks and freeze for at least 4-6 hours or until fully frozen.
  6. To unmold, run the molds under warm water for a few seconds and gently pull out the popsicles.

Notes

For an extra burst of flavor, add fresh mint leaves or swap half the raspberries for strawberries before blending.
