  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup white chocolate chips or candy melts (for mummy bandages)
  • Mini chocolate chips or edible eyes (for mummy eyes)

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, combine buttermilk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix until just combined; avoid overmixing.
  5. Lightly grease the waffle iron and pour batter to cover the surface, then cook until golden and crisp, about 4–5 minutes.
  6. Remove waffle and let cool slightly. Cut waffle into triangular slices.
  7. Melt white chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  8. Use a spoon or piping bag to drizzle melted white chocolate across the waffle slices to create the mummy bandage effect.
  9. Place mini chocolate chips or edible eyes onto the white chocolate to form eyes before it sets.
  10. Let the chocolate set completely before serving.

Notes

For extra flavor, serve with a dollop of whipped cream or a drizzle of maple syrup. Gluten-free flour can be substituted to make it gluten-free.
