Peach Salsa for Grilled Chicken

This fresh peach salsa combines juicy peaches with tangy lime and spicy jalapeño, perfect for adding a vibrant, sweet, and zesty kick to grilled chicken dishes.

Ingredients

  • 2 ripe peaches, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a medium bowl, combine the diced peaches, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add lime juice, salt, and black pepper to the bowl. Stir gently to mix all ingredients.
  3. Cover and refrigerate the salsa for at least 30 minutes to allow flavors to meld.
  4. Serve chilled atop grilled chicken breasts, garnishing as desired.

Notes

For extra crunch, add diced cucumber or serve with tortilla chips as a side snack.
