Peach Galette with Low Carb Crust

This Peach Galette features a buttery, flaky low carb crust filled with juicy fresh peaches, making it a delicious and guilt-free dessert option perfect for any occasion.

  • 3 ripe peaches, sliced
  • 1 tbsp lemon juice
  • 2 tbsp erythritol or low carb sweetener
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup cold unsalted butter, cubed
  • 1 large egg
  • 1/4 tsp salt
  • 1/2 tsp xanthan gum (optional, for extra binding)
  • 1/2 tsp vanilla extract
  • 1 tbsp heavy cream, for brushing
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the sliced peaches with lemon juice, erythritol, and cinnamon. Set aside.
  3. In a food processor, combine almond flour, coconut flour, salt, and xanthan gum (if using). Pulse to mix.
  4. Add the cold butter and pulse until mixture resembles coarse crumbs.
  5. In a small bowl, whisk the egg and vanilla extract together.
  6. Add the egg mixture to the food processor and pulse until the dough starts to come together.
  7. Turn the dough out onto a piece of parchment paper, form into a disc, and wrap. Chill for 15 minutes.
  8. Roll out the dough between two sheets of parchment paper into a roughly 12-inch circle.
  9. Transfer the dough with parchment onto the baking sheet.
  10. Arrange the peach slices in the center of the dough, leaving about a 2-inch border.
  11. Fold the edges of the dough over the peaches, pleating as you go.
  12. Brush the crust with heavy cream to promote browning.
  13. Bake for 35-40 minutes until crust is golden and peaches are tender.
  14. Allow to cool slightly before serving.

Notes

For extra richness, serve warm with a dollop of unsweetened whipped cream or low carb vanilla ice cream.
