Peach and Blackberry Summer Crumble

A luscious and naturally sweet peach and blackberry crumble perfect for summer, combining juicy fruit with a crunchy, buttery topping.

  • 4 ripe peaches, peeled and sliced
  • 1 cup fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, blackberries, granulated sugar, and lemon juice. Toss gently to coat and set aside.
  3. In another bowl, mix the flour, oats, brown sugar, cinnamon, and salt.
  4. Add the cold diced butter to the dry mixture and rub in with your fingers until the mixture resembles coarse crumbs.
  5. Place the fruit mixture into a baking dish and evenly sprinkle the crumble topping over it.
  6. Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the fruit is bubbling.
  7. Remove from oven and let cool slightly before serving. Enjoy warm with cream or ice cream if desired.

Notes

For an extra crunch, add a handful of chopped nuts such as pecans or almonds to the crumble topping before baking.
