One-Pot Creamy Tomato Basil Pasta with Shrimp

  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add shrimp and cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside.
  2. Add minced garlic to the pot and sauté for 1 minute until fragrant.
  3. Pour in crushed tomatoes, broth, and bring to a boil.
  4. Add penne pasta, stir well, and reduce heat to a simmer. Cook uncovered for 10-12 minutes, stirring occasionally until the pasta is tender and most of the liquid is absorbed.
  5. Stir in heavy cream, Parmesan cheese, and chopped basil. Season with salt, pepper, and red pepper flakes if using.
  6. Return cooked shrimp to the pot and toss to combine. Warm through for 1-2 minutes.
  7. Serve hot, garnished with extra Parmesan and basil if desired.

Notes

For extra flavor, add a splash of white wine before simmering the pasta or top with toasted pine nuts for crunch.
