  • 5 cups fresh peaches, peeled and sliced
  • 2 tablespoons fresh lemon juice
  • 1/4 cup granulated erythritol (or preferred low-sugar sweetener)
  • 1 teaspoon vanilla extract
  • 3/4 cup old-fashioned rolled oats
  • 1/3 cup almond flour
  • 1/4 cup chopped pecans
  • 2 tablespoons melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch baking dish.
  2. In a large bowl, toss the sliced peaches with lemon juice, erythritol, and vanilla extract. Spread evenly in the prepared baking dish.
  3. In a separate bowl, combine oats, almond flour, pecans, cinnamon, salt, and nutmeg if using.
  4. Pour melted coconut oil over the oat mixture and stir until crumbly.
  5. Evenly sprinkle the oat topping over the peaches in the baking dish.
  6. Bake for 35 to 40 minutes, or until the topping is golden brown and peaches are bubbling.
  7. Remove from oven and let cool slightly before serving.

Serve warm with a dollop of unsweetened Greek yogurt or a scoop of low-sugar vanilla ice cream for an extra special treat.
