Nut-Free Energy Bites

Delicious and healthy nut-free energy bites made with oats, seeds, and dried fruit for a perfect on-the-go snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup medjool dates, pitted
  • 1/4 cup dried cranberries
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp chia seeds (optional)

Instructions

  1. In a food processor, combine the rolled oats, sunflower seeds, and pumpkin seeds. Pulse until the mixture is finely ground but not powdery.
  2. Add the pitted dates, dried cranberries, honey or maple syrup, vanilla extract, salt, and chia seeds (if using) to the food processor.
  3. Process until the mixture starts to come together and sticks when pressed.
  4. Using your hands, roll the mixture into 1-inch bite-sized balls.
  5. Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to one week.

Notes

For an extra boost, roll the bites in shredded coconut or cocoa powder before chilling.
