Delicious and creamy no-bake peanut butter bars made keto-friendly with natural sweeteners and low-carb ingredients, perfect for a quick snack or dessert.

  • 1 cup natural peanut butter (unsweetened, unsalted)
  • 1/2 cup coconut oil, melted
  • 1/4 cup powdered erythritol or preferred keto sweetener
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup almond flour
  • Optional: 2 tablespoons sugar-free dark chocolate chips for topping

Instructions

  1. In a medium bowl, combine the peanut butter, melted coconut oil, powdered erythritol, vanilla extract, and salt until smooth.
  2. Stir in the almond flour until thoroughly mixed and forming a dough-like consistency.
  3. Line an 8×8 inch baking dish with parchment paper and spread the mixture evenly into the pan, pressing down firmly.
  4. If using, sprinkle the sugar-free dark chocolate chips evenly over the top and gently press them into the mixture.
  5. Refrigerate for at least 2 hours or until firm.
  6. Once set, remove from the fridge and cut into bars. Store in an airtight container in the refrigerator.

Notes

For a creamier texture, warm the peanut butter slightly before mixing. You can also add a pinch of cinnamon for extra flavor.
