No-Bake Lime Cheesecake (Cottage Cheese Hack)

This refreshing no-bake lime cheesecake uses cottage cheese for a creamy, protein-packed twist that’s easy to make and perfect for a light dessert.

  • 1 1/2 cups cottage cheese
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tbsp sugar (for crust)

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar. Press mixture evenly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
  2. In a blender or food processor, blend cottage cheese until smooth.
  3. In a separate bowl, beat softened cream cheese and powdered sugar until creamy and smooth.
  4. Add blended cottage cheese, lime juice, lime zest, and vanilla extract to the cream cheese mixture. Mix until fully combined and smooth.
  5. Pour the cheesecake filling over the chilled crust and smooth the top with a spatula.
  6. Refrigerate the cheesecake for at least 4 hours or overnight until set.
  7. Before serving, garnish with extra lime zest or thin lime slices if desired.

Notes

For an extra touch, top the cheesecake with fresh berries or a drizzle of honey to enhance the lime flavor.
