Nectarine & Peach Galette-Style Crisp

A rustic, naturally sweet galette-style crisp featuring juicy nectarines and peaches baked with a buttery oat topping, perfect for a simple and delicious dessert.

  • 3 ripe nectarines, pitted and sliced
  • 3 ripe peaches, pitted and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • Optional: vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch pie dish or cast-iron skillet.
  2. In a large bowl, combine sliced nectarines and peaches with granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, and salt. Toss gently to coat. Set aside.
  3. In another bowl, mix together oats, flour, brown sugar, baking powder, and salt.
  4. Using a pastry cutter or your fingers, cut the cold butter into the oat mixture until it resembles coarse crumbs.
  5. Transfer the fruit mixture into the prepared dish, spreading it evenly.
  6. Sprinkle the oat topping evenly over the fruit.
  7. Bake for 35–40 minutes, or until the topping is golden brown and the fruit is bubbly.
  8. Remove from the oven and let cool slightly before serving.
  9. Serve warm, optionally topped with vanilla ice cream or whipped cream.

Notes

For a nuttier flavor, sprinkle chopped toasted almonds or pecans over the topping before baking.
