Mixed Berry Summer Pudding (Light)

A refreshing and naturally light mixed berry summer pudding made with fresh berries and whole wheat bread, perfect for a healthy dessert or snack.

Ingredients

  • 3 cups mixed fresh berries (strawberries, raspberries, blueberries, blackberries)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 8 slices whole wheat bread, crusts removed
  • 1/2 cup Greek yogurt (optional, for serving)

Instructions

  1. In a bowl, gently mash half of the mixed berries with honey and lemon juice to release juices but keep some berries whole.
  2. Line a 6-cup pudding basin or deep bowl with plastic wrap, leaving overhang to cover later.
  3. Cut bread slices into circles to fit the basin and line the base and sides with bread pieces, slightly overlapping.
  4. Spoon a layer of berry mixture over the bread inside the basin.
  5. Continue layering bread and berries, finishing with a layer of bread on top.
  6. Place a small plate on top to weigh the pudding down and refrigerate for at least 4 hours or overnight to set.
  7. To serve, invert the pudding onto a serving plate, remove plastic wrap, and serve with a dollop of Greek yogurt if desired.

Notes

For extra flavor, soak the bread slices lightly in berry juice before layering. This pudding also pairs wonderfully with a drizzle of vanilla yogurt or a sprig of fresh mint.
