This Low Calorie Strawberry Poke Cake is a light, refreshing dessert that combines moist cake with fresh strawberries and a healthy yogurt glaze, perfect for guilt-free indulgence.

  • 1 box sugar-free vanilla cake mix
  • 1 cup water
  • 1/3 cup egg whites
  • 1 tsp vanilla extract
  • 1 package (3 oz) sugar-free strawberry gelatin
  • 2 cups fresh strawberries, sliced
  • 1 cup nonfat Greek yogurt
  • 2 tbsp honey or sugar-free sweetener
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake batter according to box instructions using water, egg whites, and vanilla extract.
  2. Pour batter into a greased 9×13 inch baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
  3. While the cake is baking, dissolve the sugar-free strawberry gelatin in 1 cup boiling water, stirring until completely dissolved. Let cool slightly.
  4. Once the cake is done, let it cool for 10 minutes. Using the handle of a wooden spoon, poke holes evenly all over the cake.
  5. Slowly pour the cooled gelatin over the cake, allowing it to seep into the holes. Refrigerate the cake for at least 1 hour to set.
  6. In a small bowl, mix Greek yogurt, honey, and lemon juice until smooth for the glaze.
  7. Spread the yogurt glaze evenly over the chilled cake, then top with sliced fresh strawberries.
  8. Serve chilled and enjoy this refreshing low calorie treat!

Notes

For an extra boost of flavor, add a few fresh mint leaves on top before serving or substitute the Greek yogurt glaze with a low-fat whipped topping.
