Lean Beef Sweet Potato Breakfast Hash

  • 1 lb lean ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish
  • Optional: 2 eggs

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for about 8-10 minutes until tender, stirring occasionally.
  3. Add chopped onion, red bell pepper, and garlic; sauté for 3-4 minutes until softened.
  4. Push veggies to the side and add ground beef to the skillet.
  5. Cook beef until browned and cooked through, breaking it up with a spoon.
  6. Stir in smoked paprika, cumin, salt, and pepper; mix everything together evenly.
  7. Optional: In a separate pan, cook eggs to your liking to serve on top of the hash.
  8. Garnish with sliced green onions and serve warm.

Notes

For extra flavor, top the hash with a fried or poached egg and a sprinkle of fresh cilantro or parsley.
