  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup small pasta (like ditalini or elbow macaroni)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Add carrots and celery; cook for 5 minutes, stirring occasionally.
  3. Stir in zucchini and green beans; cook for another 3 minutes.
  4. Add diced tomatoes with their juice and vegetable broth. Bring to a boil.
  5. Add cannellini beans, dried oregano, and dried basil. Reduce heat and simmer for 15 minutes.
  6. Add pasta and cook until tender, about 8–10 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Remove from heat and stir in fresh parsley.
  9. Ladle soup into bowls and top with grated Parmesan cheese if desired. Serve warm.

Notes

For a richer flavor, add a Parmesan rind while simmering the soup and remove before serving. You can also add a splash of good quality olive oil before serving for extra aroma.
