Healthy Turkey Meatballs with Zoodles

Delicious and nutritious turkey meatballs paired with fresh zucchini noodles create a low-carb, protein-packed meal perfect for a healthy dinner.

Ingredients

  • 1 lb ground turkey
  • 1/4 cup breadcrumbs (whole wheat preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchinis, spiralized into zoodles
  • 1 tablespoon olive oil
  • 1 cup marinara sauce (low sugar)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Mix until just combined.
  3. Form the mixture into 16 small meatballs and place them on a lined baking sheet.
  4. Bake the meatballs for 18-20 minutes, until cooked through and golden brown.
  5. While the meatballs bake, heat olive oil in a large skillet over medium heat. Add the zoodles and sauté for 2-3 minutes until just tender.
  6. Add marinara sauce to the skillet with zoodles and stir to combine, warming through.
  7. Serve the baked turkey meatballs on top of the zoodles and sauce. Garnish with additional parsley or Parmesan if desired.

Notes

For extra flavor, add a pinch of red pepper flakes to the meatball mixture or serve with a sprinkle of fresh basil on top.
