Healthy School Lunch Bento Box (Turkey/Grapes)

A colorful and nutritious school lunch bento box packed with fresh veggies, lean protein, and wholesome carbs, perfect for a balanced midday meal.

Ingredients

  • 1 cup cooked quinoa
  • 4 oz grilled chicken breast, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber slices
  • 1/4 cup shredded carrots
  • 1/4 cup edamame, shelled
  • 1 small apple, sliced
  • 2 tablespoons hummus
  • 1 tablespoon sunflower seeds
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions; allow to cool.
  2. Grill the chicken breast until fully cooked, then slice into strips.
  3. Wash and prepare all vegetables and fruit: halve cherry tomatoes, slice cucumber and apple, shred carrots.
  4. Arrange quinoa at the base of the bento box.
  5. Place grilled chicken slices, cherry tomatoes, cucumber slices, shredded carrots, and edamame into separate compartments or sections around the quinoa.
  6. Add a small container or section with hummus for dipping.
  7. Sprinkle sunflower seeds over the quinoa or veggies for added crunch.
  8. Pack apple slices as a fresh, sweet finish to the meal.
  9. Season with salt and pepper as desired before packing.

Notes

For variety, swap grilled chicken with tofu or turkey slices; adding a hard-boiled egg can also boost protein.
