Healthy Chocolate Peanut Butter Banana Bites

These Healthy Chocolate Peanut Butter Banana Bites combine ripe bananas, creamy peanut butter, and rich dark chocolate for a delicious, guilt-free snack perfect for any time of day.

  • 2 ripe bananas
  • 1/2 cup natural peanut butter
  • 1/2 cup dark chocolate chips (70% cocoa or higher)
  • 1 tablespoon coconut oil
  • Optional: Sea salt for sprinkling

Instructions

  1. Slice the bananas into 1/2 inch thick rounds.
  2. Spread a small amount of peanut butter on one banana slice and sandwich it with another slice.
  3. Place the banana peanut butter bites on a parchment-lined tray and freeze for 30 minutes.
  4. In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  5. Dip the frozen banana bites into the melted chocolate to fully coat them.
  6. Place the chocolate-covered bites back on the parchment paper and sprinkle lightly with sea salt if desired.
  7. Freeze again for at least 1 hour until the chocolate is set.
  8. Serve chilled and enjoy.

Notes

For an extra crunch, sprinkle chopped nuts on the chocolate coating before freezing. Store leftovers in the freezer for up to one week.
