  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup
  • 1/3 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots (about 2 medium carrots)
  • 1/3 cup chopped walnuts
  • 1/4 cup raisins
  • 2 tablespoons shredded unsweetened coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together maple syrup, applesauce, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in grated carrots, chopped walnuts, raisins, and shredded coconut if using.
  6. Drop spoonfuls of the dough onto the prepared baking sheet, flattening each slightly.
  7. Bake for 15-18 minutes or until edges are golden and cookies are set.
  8. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
