Ground Turkey Summer Sloppy Joes (Lettuce Wrapped)

A light and flavorful twist on classic sloppy joes using lean ground turkey and fresh summer flavors, served wrapped in crisp lettuce for a low-carb, refreshing meal.

  • 1 lb ground turkey
  • 1 small red bell pepper, finely diced
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 8 large butter lettuce leaves
  • 1 tbsp olive oil
  • Optional: chopped fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and red bell pepper, sauté until softened, about 4-5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add ground turkey to the skillet and cook until browned and cooked through, breaking it up with a spoon.
  4. Stir in tomato sauce, ketchup, Dijon mustard, apple cider vinegar, smoked paprika, chili powder, salt, and pepper.
  5. Reduce heat to low and simmer the mixture for 5-7 minutes, stirring occasionally, until thickened.
  6. Remove from heat and spoon the turkey mixture onto individual butter lettuce leaves.
  7. Garnish with fresh parsley or cilantro if desired, then wrap and serve immediately.

Notes

For added crunch and flavor, top the sloppy joes with diced pickles or a sprinkle of shredded cheese before wrapping.
