Ground Beef Taco Salad (Greek Yogurt Dressing)

A flavorful and healthy ground beef taco salad topped with a creamy Greek yogurt dressing, perfect for a quick and satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • For the Greek Yogurt Dressing:
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, about 6-8 minutes. Drain excess fat.
  2. Add the taco seasoning and 1/4 cup water to the cooked beef. Stir and simmer for 3-5 minutes until thickened. Remove from heat.
  3. In a small bowl, whisk together Greek yogurt, lime juice, chili powder, cumin, salt, and pepper to make the dressing. Set aside.
  4. In a large salad bowl, combine chopped romaine, cherry tomatoes, red onion, black beans, corn, avocado, and shredded cheddar cheese.
  5. Add the cooked taco-seasoned ground beef to the salad and toss gently.
  6. Drizzle the Greek yogurt dressing over the salad and sprinkle with fresh cilantro.
  7. Serve immediately and enjoy!

Notes

For an extra kick, add sliced jalapeños or a dash of hot sauce to the Greek yogurt dressing.
