  • 1 lb ground beef
  • 1 large red bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup black beans, rinsed and drained
  • 1/2 cup sliced black olives
  • 1 jalapeño, thinly sliced (optional)
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 cup salsa
  • 1/2 cup sour cream
  • Tortilla chips for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the taco seasoning and a splash of water to the beef. Stir and simmer for 3-4 minutes until well combined.
  4. On a large sheet pan, spread the sliced bell peppers evenly to create a colorful base layer.
  5. Distribute the cooked ground beef over the bell peppers.
  6. Sprinkle black beans, olives, jalapeño slices, and diced red onion evenly on top.
  7. Generously top with shredded cheddar and Monterey Jack cheeses.
  8. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and garnish with fresh cilantro. Serve with salsa and sour cream on the side, and tortilla chips if desired.

Notes

For extra crispness, serve immediately. You can also add avocado slices or guacamole on top for a creamy finish.
