Ingredients

Scale
  • 12 large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 slices low calorie bread
  • 1/4 cup low-fat mayonnaise
  • 1 teaspoon hot sauce (optional)
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced
  • 1/4 cup sliced pickles
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Thread the shrimp onto skewers and grill for 2-3 minutes per side until opaque and cooked through.
  4. Meanwhile, mix the low-fat mayonnaise with hot sauce if using.
  5. Toast the low calorie bread slices lightly on the grill.
  6. Spread the mayo mixture evenly on each slice of bread.
  7. Layer grilled shrimp, shredded lettuce, tomato slices, and pickles on two slices of bread.
  8. Squeeze lemon juice over the shrimp for added brightness.
  9. Top with remaining bread slices to form sandwiches and serve immediately.

Notes

For an extra kick, add a drizzle of Cajun seasoning or swap the low-fat mayo with Greek yogurt for a tangier spread.
