Grilled Salmon with Mango Lime Salsa

  • 4 salmon fillets (6 oz each)
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush salmon fillets with 1 tablespoon olive oil and season with salt and pepper.
  3. Place salmon on the grill and cook for 4-5 minutes per side, until opaque and cooked through.
  4. While the salmon cooks, prepare the mango lime salsa by combining diced mango, red onion, jalapeño, cilantro, lime juice, remaining olive oil, salt, pepper, and honey in a bowl.
  5. Mix well and set aside to let flavors meld.
  6. Remove salmon from grill and let rest for a few minutes.
  7. Top each fillet with a generous spoonful of mango lime salsa and serve immediately.

Notes

For extra flavor, marinate the salmon in lime juice and olive oil for 15 minutes before grilling. Serve with steamed rice or a fresh green salad.
