Grilled Salmon Kabobs

These Grilled Salmon Kabobs feature tender, smoky salmon chunks marinated in a zesty blend, grilled to perfection for a healthy and delicious meal.

Ingredients

  • 1.5 lbs salmon fillet, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, smoked paprika, oregano, salt, and pepper.
  3. Add salmon cubes to the marinade and toss gently to coat. Refrigerate and marinate for 20–30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread salmon, bell peppers, and onion pieces alternately onto skewers.
  6. Place kabobs on the grill and cook for 3–4 minutes per side, until salmon is cooked through and vegetables are slightly charred.
  7. Remove from grill and let rest for a couple of minutes before serving.

Notes

For extra flavor, serve with a side of garlic yogurt sauce or a fresh herb chutney.
